Roast Chicken with Tray Bake Veg & Greens

1 whole roast chicken

Box Produce

  • 500g potatoes
  • 300g beetroot
  • 250g carrots
  • ½ cauliflower
  • ½ broccoli

Pantry Staples

  • Olive oil
  • garlic
  • salt
  • pepper
  • herbs

  1. Preheat oven to 180°C.
  2. Place chicken in a roasting dish, drizzle with oil and season well. Roast for 1 hour 30 minutes.
  3. Chop potatoes, beetroot, carrots and cauliflower. Toss with oil, garlic, salt and pepper.
  4. Add vegetables to a tray and roast for the final 45–60 minutes of the chicken cooking time.
  5. Cut broccoli into florets and steam for 3–4 minutes just before serving.
  6. Rest chicken for 10 minutes before carving. Serve with roasted vegetables and greens.
