Roast Chicken with Tray Bake Veg & Greens

1 whole roast chicken

- 500g potatoes
- 300g beetroot
- 250g carrots
- ½ cauliflower
- ½ broccoli
Pantry Staples
- Olive oil
- garlic
- salt
- pepper
- herbs
- Preheat oven to 180°C.
- Place chicken in a roasting dish, drizzle with oil and season well. Roast for 1 hour 30 minutes.
- Chop potatoes, beetroot, carrots and cauliflower. Toss with oil, garlic, salt and pepper.
- Add vegetables to a tray and roast for the final 45–60 minutes of the chicken cooking time.
- Cut broccoli into florets and steam for 3–4 minutes just before serving.
- Rest chicken for 10 minutes before carving. Serve with roasted vegetables and greens.
