Roast Barramundi with Crispy Potatoes, Broccoli & Lemon Greens

  • 700g potatoes
  • 1 broccoli head
  • 1 bunch chard
  • ½ red onion

  • 500g barramundi fillets (link to barra)

Pantry

  • Olive oil
  • 2 garlic cloves
  • ½ lemon
  • Salt & pepper

  1. Heat oven to 200°C.
  2. Chop potatoes into wedges and toss with olive oil, salt and pepper.
  3. Roast for 30–35 minutes until crispy.
  4. Add broccoli florets to the tray for the last 10–12 minutes.
  5. Season barramundi with salt, pepper and olive oil.
  6. Pan fry skin-side down for 3–4 minutes, then flip and cook another 2–3 minutes.
  7. Slice chard stems and leaves.
  8. In another pan sauté garlic and onion in olive oil.
  9. Add chard and cook until wilted.
  10. Finish with a squeeze of lemon and serve with fish and roast veg.
