Roast Barramundi with Crispy Potatoes, Broccoli & Lemon Greens

- 700g potatoes
- 1 broccoli head
- 1 bunch chard
- ½ red onion

- 500g barramundi fillets (link to barra)
Pantry
- Olive oil
- 2 garlic cloves
- ½ lemon
- Salt & pepper
- Heat oven to 200°C.
- Chop potatoes into wedges and toss with olive oil, salt and pepper.
- Roast for 30–35 minutes until crispy.
- Add broccoli florets to the tray for the last 10–12 minutes.
- Season barramundi with salt, pepper and olive oil.
- Pan fry skin-side down for 3–4 minutes, then flip and cook another 2–3 minutes.
- Slice chard stems and leaves.
- In another pan sauté garlic and onion in olive oil.
- Add chard and cook until wilted.
- Finish with a squeeze of lemon and serve with fish and roast veg.
