Rainbow Veggie Sushi Bowls
These rainbow veggie sushi bowls give you all the flavours of sushi without the rolling! Fresh, crunchy organic vegetables from your organic box delivery are arranged over seasoned rice and drizzled with a tangy dressing. They're healthy, delicious and so much easier than making traditional sushi rolls.
- 500g carrots, julienned or ribboned
- 300g cucumber, julienned
- 250g beans, blanched
- 300g zucchini, julienned
- 400g tomatoes, diced
- 2 cups baby spinach
- 2 cups sushi rice or short-grain rice
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Optional protein: Organic Salmon - cooked, OR Organic Chicken
- Sesame seeds for garnish
- Nori sheets, cut into strips (optional)
For the Dressing:
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey
- 1 teaspoon fresh ginger, grated
- 1 teaspoon wasabi paste (optional)
- Cook rice according to package directions. While still hot, mix in rice vinegar, sugar, and salt. Let cool to room temperature.
- Prepare all vegetables: Julienne carrots, cucumber, and zucchini into thin matchsticks. Blanch beans in boiling water for 2 minutes, then plunge them into ice water. Dice tomatoes.
- Make the dressing: Whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and wasabi if using.
- If using salmon or chicken, cook and slice. Assemble the bowls - divide seasoned rice between 4 bowls as the base.
- Arrange vegetables in colourful sections on top of the rice: julienned carrots, cucumber, zucchini, beans, diced tomatoes, and baby spinach.
- Add your protein in the centre or on top. Drizzle generously with the dressing.
- Sprinkle with sesame seeds and nori strips if using. Serve immediately with extra dressing on the side.
Add pickled ginger, avocado slices, or edamame beans for extra toppings. Serve with miso soup for a complete Japanese-inspired meal!
Storage: Store components separately. Rice keeps for 3 days, and vegetables for 2 days. Assemble fresh bowls as needed.
