Using the remaining veggies for a crunchy, chilled or lukewarm stir-fry.

Ingredients: 500g lean beef mince OR just the veggies: 400g broccoli (cut into tiny florets), 2 carrots (sliced), 2 tomatoes (wedged), 1/2 bunch chard
Method: Cook the beef. Quickly stir-fry the broccoli and carrots with a splash of water to steam-soften. Add the chard and tomatoes at the last second. Serve as is, or toss with a simple soy/honey dressing (pantry).
