SPINACH AND POTATO FRITTATA
This spinach and potato frittata is incredibly versatile.You can serve it for breakfast, pack it for lunch, or enjoy it with salad for dinner. Using organic vegetables from your organic food box delivery is nutritious, filling, and absolutely delicious hot or cold.
- 500g potatoes, thinly sliced
- 1 bunch spinach, roughly chopped
- 400g red onions, thinly sliced
- 1 punnet cherry tomatoes, halved
- 8 Organic Eggs
- 150g Organic Cheese - grated (cheddar or feta)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- ¼ cup milk or cream
- Salt, pepper, and nutmeg
- Fresh herbs (parsley or basil)
- Preheat the oven to 180°C. Thinly slice potatoes (about 3mm thick). Pat dry with a paper towel.
- Heat 2 tablespoons of olive oil in a large oven-safe frying pan (about 26cm). Add sliced potatoes in an even layer.
- Cook for 8-10 minutes over medium heat, turning occasionally, until potatoes are tender and lightly golden.
- Add sliced red onions and garlic. Cook for 3 minutes until soft.
- Add chopped spinach. Cook for 2 minutes until wilted. Remove excess liquid if needed.
- In a large bowl, whisk together eggs, milk, grated cheese (reserve some for topping), salt, pepper, and a pinch of nutmeg.
- Pour the egg mixture over the vegetables in the pan. Shake gently to distribute evenly.
- Top with halved cherry tomatoes and remaining cheese.
- Cook on the stovetop for 3-4 minutes until edges start to set.
- Transfer the pan to the oven. Bake for 15-20 minutes until the centre is set, and the top is golden.
Remove from the oven. Let rest for 5 minutes before slicing. Garnish with fresh herbs. Serve warm or at room temperature.
