Potato Broccoli Herb Frittata

Serves: 4 | Cooking Time:

  • Remaining potatoes (~500g)
  • 1/2 broccoli, chopped
  • Remaining herbs
  • 6–8 eggs
  • Olive oil
  • Salt & pepper

To Serve

  • Remaining cucumber
  • Remaining tomatoes

  1. Slice potatoes thinly and pan-fry until mostly cooked.
  2. Add broccoli and cook 3 mins.
  3. Whisk eggs with herbs, salt and pepper.
  4. Pour over vegetables.
  5. Cook on stovetop 3 mins then finish under grill or in oven until set.
  6. Serve with cucumber and tomato salad.
