Potato Broccoli Herb Frittata
Serves: 4 | Cooking Time:
- Remaining potatoes (~500g)
- 1/2 broccoli, chopped
- Remaining herbs
- 6–8 eggs
- Olive oil
- Salt & pepper
To Serve
- Remaining cucumber
- Remaining tomatoes
- Slice potatoes thinly and pan-fry until mostly cooked.
- Add broccoli and cook 3 mins.
- Whisk eggs with herbs, salt and pepper.
- Pour over vegetables.
- Cook on stovetop 3 mins then finish under grill or in oven until set.
- Serve with cucumber and tomato salad.
