Pork, Sweet Potato & Chard Cottage Pie
A cosy, make-ahead comfort dish, savoury pork mince topped with creamy sweet potato mash.
Protein:500g pork mince
From your box:
- 500g red sweet potato, peeled and chopped
- 150g carrots, finely diced
- 150g brown onion, diced
- ½ bunch chard, finely sliced
Pantry:
- 1 tbsp olive oil
- 2 garlic cloves
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tbsp Worcestershire sauce, optional
- ½ cup stock
- Butter and/or milk for mash
- Salt and pepper
- Boil sweet potato until soft, then drain and mash with a little butter or milk. Season.
- Meanwhile, heat olive oil in a frying pan.
- Cook onion and carrot for about 5 minutes.
- Add garlic and pork mince and cook until browned.
- Stir through tomato paste, thyme, Worcestershire sauce and stock.
- Simmer for 5–10 minutes until slightly thickened.
- Stir through chopped chard and cook until wilted.
- Transfer pork mixture to a baking dish.
- Spoon sweet potato mash over the top and rough it up with a fork.
- Bake at 200°C for around 20 minutes until bubbling and lightly golden.
Tip:This is a great one to make ahead and pop into the oven when everyone is hungry.
