Pork, Sweet Potato & Chard Cottage Pie

A cosy, make-ahead comfort dish, savoury pork mince topped with creamy sweet potato mash.

Protein:500g pork mince

Serves: 4 | Cooking Time: 50 min

From your box:

  • 500g red sweet potato, peeled and chopped
  • 150g carrots, finely diced
  • 150g brown onion, diced
  • ½ bunch chard, finely sliced

Pantry:

  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce, optional
  • ½ cup stock
  • Butter and/or milk for mash
  • Salt and pepper

  1. Boil sweet potato until soft, then drain and mash with a little butter or milk. Season.
  2. Meanwhile, heat olive oil in a frying pan.
  3. Cook onion and carrot for about 5 minutes.
  4. Add garlic and pork mince and cook until browned.
  5. Stir through tomato paste, thyme, Worcestershire sauce and stock.
  6. Simmer for 5–10 minutes until slightly thickened.
  7. Stir through chopped chard and cook until wilted.
  8. Transfer pork mixture to a baking dish.
  9. Spoon sweet potato mash over the top and rough it up with a fork.
  10. Bake at 200°C for around 20 minutes until bubbling and lightly golden.

Tip:This is a great one to make ahead and pop into the oven when everyone is hungry.
