Pineapple Banana Loaf

Wet Ingredients:
- 3 ripe bananas, mashed

Preheat the oven to 180°C. Line a standard loaf tin with baking paper, leaving some hanging over the sides for easy removal. Mash the bananas in a large bowl until smooth with a few small lumps. Finely chop the pineapple and pat dry with a paper towel to remove excess moisture. Add eggs, oil, milk, and vanilla to the mashed bananas. Whisk until combined. In another bowl, sift the flour, baking powder, baking soda, cinnamon, and salt. Stir in the brown sugar. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Don't overmix or the loaf will go tough. Fold in the chopped pineapple, shredded coconut, and walnuts if using. Pour the batter into the prepared loaf tin and smooth the top. Bake for 60-70 minutes until a skewer inserted into the centre comes out clean. If the top browns too quickly, cover loosely with foil for the last 15 minutes. Let the loaf cool in the tin for 10 minutes, then lift out using the baking paper. Cool completely on a wire rack before slicing.
