  • Potatoes (500g)
  • Pumpkin (remaining)
  • Carrots (remaining)

Pantry Staples

  • Curry spices, garlic, onion, stock

  1. Simmer mung dal with turmeric + garlic until soft.
  2. Roast potatoes, pumpkin, carrots until golden.
  3. Stir roasted veg into dal.
  4. Adjust seasoning, finish with spinach (remaining if any).
