Ingredients:450g mini beef meatballs, 1 spaghetti squash (cooked & shredded), 200g mushrooms (sliced), 1/2 bag baby spinach, 1 tin diced tomatoes
Method: Pan-fry the meatballs until browned. Add the mushrooms (or diced tomatoes or other sub) and cook until soft. Toss in the shredded spaghetti squash strands and the baby spinach. Toss until the spinach wilts and everything is coated in the meatball juices.
