Mild Lentil & Veggie Curry

Mild and creamy, Freezer friendly, Budget friendly

From Your Large Family Box:

  • 500g potatoes (cubed)
  • 125g green beans (chopped)
  • ¼ bag baby spinach
  • ½ bunch bok choy (sliced)
  • ½ red onion (~70g, diced)

Pantry:

1 cup red lentils (rinsed), 1 tbsp mild curry paste, 1 can coconut milk, 1 cup water, rice to serve

  1. Sauté onion in oil 3 minutes.
  2. Stir in curry paste.
  3. Add potatoes, lentils, coconut milk and water. Simmer 15–20 mins.
  4. Add beans and cook 5 mins.
  5. Stir through spinach and bok choy until wilted.
  6. Serve with rice
