Mediterranean Veggie Tray Bake

The "set it and forget it" family favorite.

  • 3 Potatoes, diced into 2cm cubes
  • 2 Zucchini, sliced into thick half-moons
  • 200g Beans, trimmed
  • 4 Tomatoes, quartered
  • 2 cups Rocket
  • 1/4 cup Olive oil
  • Seasoning: 1 tbsp Dried Oregano, 1 tsp Garlic salt, Balsamic vinegar

  • Spread potatoes on a large baking tray. Toss with half the oil and garlic salt. Roast at 200°C for 20 minutes.
  • Add zucchini and beans to the tray. Toss with remaining oil and oregano. Roast for another 15 minutes.
  • Add the tomatoes for the final 5–10 minutes until they burst.
  • Remove from oven, toss the fresh rocket over the top so it wilts in the residual heat.
  • Drizzle with balsamic vinegar and serve as a main or a hearty side.
