Mediterranean Meatballs with Roast Pumpkin & Garlicky Greens

  • 380g meatballs

Box Ingredients

  • 500g Jap pumpkin
  • 400g potatoes
  • 1/2 punnet cherry tomatoes
  • 1/2 bunch baby spinach
  • 1 garlic clove (or pantry garlic)

Pantry Staples

  • Olive oil
  • Dried oregano
  • Salt & pepper

  1. Preheat oven to 200°C.
  2. Chop pumpkin and potatoes into wedges. Toss with olive oil, oregano, salt and pepper.
  3. Spread on a tray and roast for 25 minutes.
  4. Add meatballs and cherry tomatoes to the tray and roast another 15–18 minutes until cooked through.
  5. In a pan, quickly sauté spinach with garlic and olive oil until wilted.
  6. Serve meatballs and roasted vegetables over the garlicky spinach.
