Mediterranean Meatballs with Roast Pumpkin & Garlicky Greens

Box Ingredients
- 500g Jap pumpkin
- 400g potatoes
- 1/2 punnet cherry tomatoes
- 1/2 bunch baby spinach
- 1 garlic clove (or pantry garlic)
Pantry Staples
- Olive oil
- Dried oregano
- Salt & pepper
- Preheat oven to 200°C.
- Chop pumpkin and potatoes into wedges. Toss with olive oil, oregano, salt and pepper.
- Spread on a tray and roast for 25 minutes.
- Add meatballs and cherry tomatoes to the tray and roast another 15–18 minutes until cooked through.
- In a pan, quickly sauté spinach with garlic and olive oil until wilted.
- Serve meatballs and roasted vegetables over the garlicky spinach.
