Mediterranean Chicken Tenderloin Tray Bake

- 550g chicken tenderloins
Produce Box
- ½ Jap pumpkin, cut into wedges
- 3 Nicola potatoes, cut into chunks
- 1 zucchini, sliced
- 2 tomatoes, cut into wedges
- 1 red onion, sliced
Pantry Staples
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 2 tsp Italian herbs
- 1 tsp smoked paprika
- Salt & pepper
- Preheat oven to 200°C fan-forced (220°C conventional).
- Line a baking tray with baking paper.
- Toss pumpkin, potatoes and onion with olive oil, garlic, herbs, paprika, salt and pepper.
- Roast for 20 minutes.
- Add zucchini, tomatoes and chicken tenderloins to the tray.
- Drizzle with a little extra olive oil and season.
- Return to the oven for 18–22 minutes, or until the chicken reaches 75°C internally and vegetables are golden.
- Rest for 5 minutes before serving.
Chef's Tip: Sprinkle with fresh parsley or grated Parmesan before serving if desired.
