Mediterranean Chicken Tenderloin Tray Bake

  • 550g chicken tenderloins

Produce Box

  • ½ Jap pumpkin, cut into wedges
  • 3 Nicola potatoes, cut into chunks
  • 1 zucchini, sliced
  • 2 tomatoes, cut into wedges
  • 1 red onion, sliced

Pantry Staples

  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 2 tsp Italian herbs
  • 1 tsp smoked paprika
  • Salt & pepper

  1. Preheat oven to 200°C fan-forced (220°C conventional).
  2. Line a baking tray with baking paper.
  3. Toss pumpkin, potatoes and onion with olive oil, garlic, herbs, paprika, salt and pepper.
  4. Roast for 20 minutes.
  5. Add zucchini, tomatoes and chicken tenderloins to the tray.
  6. Drizzle with a little extra olive oil and season.
  7. Return to the oven for 18–22 minutes, or until the chicken reaches 75°C internally and vegetables are golden.
  8. Rest for 5 minutes before serving.

Chef's Tip: Sprinkle with fresh parsley or grated Parmesan before serving if desired.
