Loaded Baked Potatoes

Serves: 4 | Cooking Time:

  • Remaining potatoes (~0–200g depending on actual weights)
  • 1 corn cob
  • Remaining 1/2 cos lettuce
  • 1 continental cucumber
  • Optional leftover mince/chickpeas/chicken
  • Cheese/sour cream optional

  1. Bake potatoes at 220C until crispy.
  2. Cook corn and remove kernels.
  3. Slice lettuce and cucumber.
  4. Split potatoes and load with toppings.
