Loaded Baked Potatoes
Serves: 4 | Cooking Time:
- Remaining potatoes (~0–200g depending on actual weights)
- 1 corn cob
- Remaining 1/2 cos lettuce
- 1 continental cucumber
- Optional leftover mince/chickpeas/chicken
- Cheese/sour cream optional
- Bake potatoes at 220C until crispy.
- Cook corn and remove kernels.
- Slice lettuce and cucumber.
- Split potatoes and load with toppings.
