Lentil, Sweet Potato & Silverbeet Curry

  • 1 sweet potato, diced
  • 1 bunch silverbeet, chopped (stems + leaves)
  • 2 cloves garlic, minced
  • Coriander, to serve

On-hand staples from the pantry

  • 1 tin coconut milk
  • 1–2 tbsp curry paste or powder
  • 1 tbsp oil
  • Salt to taste
  • Rice (to serve)

  1. Heat oil in a pot over medium heat.
  2. Add garlic and curry paste, cook until fragrant.
  3. Add sweet potato and stir to coat.
  4. Pour in coconut milk and simmer for 10–15 minutes.
  5. Add lentils and silverbeet.
  6. Cook until greens are wilted and sweet potato is tender.
  7. Season to taste.
  8. Serve with rice and fresh coriander.
