Lentil & Mushroom Spaghetti Bolognese
Replace: Lean Beef Mince
With: 1 tin brown lentils (400g) + 200g mushrooms
The grated zucchini, carrot and onion stay exactly the same. The lentils provide the same comforting texture and protein.
Alternative: Use plant-based mince if available.
Protein
- 1 tin brown lentils (400g) + 200g mushrooms
Box Contents
- 300g zucchini, grated
- 100g carrots, grated
- 1 brown onion, finely diced
Pantry Staples
- 500g spaghetti
- 700ml passata
- 2 cloves garlic
- 1 tsp dried oregano
- Olive oil
- Salt and pepper
- Cook spaghetti according to packet instructions.
- Heat oil in a large saucepan.
- Cook onion until softened.
- Add mince and cook until browned.
- Stir through zucchini and carrot.
- Add garlic, passata and oregano.
- Simmer for 20-25 minutes.
- Serve over spaghetti.
