Box Ingredients

  • Potatoes (500g)
  • Carrots (½ bunch)
  • Zucchini (1)
  • Rocket (½ bag)
  • Herb bunch
  • Garlic clove

Pantry Staples

  • Olive oil, salt, pepper
  • Lemon or vinegar

  1. Chop potatoes, carrots, zucchini → toss with oil, salt, pepper → roast at 200°C for 35–40 mins.
  2. Season snapper with chopped herbs, garlic, oil, salt.
  3. Bake fish for 10–12 mins (slightly less than salmon as it’s leaner).
  4. Serve with fresh rocket tossed in lemon dressing.
