- Potatoes (500g)
- Carrots (½ bunch)
- Zucchini (1)
- Rocket (½ bag)
- Herb bunch
- Garlic clove

Pantry Staples
- Olive oil, salt, pepper
- Lemon or vinegar
- Chop potatoes, carrots, zucchini → toss with oil, salt, pepper → roast at 200°C for 35–40 mins.
- Season snapper with chopped herbs, garlic, oil, salt.
- Bake fish for 10–12 mins (slightly less than salmon as it’s leaner).
- Serve with fresh rocket tossed in lemon dressing.
