Lemon & Herb Chicken Summer Salad

Utilizing the fruit for a pop of sweetness which pairs beautifully with chicken.

Ingredients: 500g chicken breast (sliced thin), 1/2 salad mix bag, 1 cucumber (sliced), 2 carrots (shaved into ribbons), blueberries, grapes.

Method: Season chicken with salt, pepper, and lemon juice; pan-fry until golden. Toss the salad mix, cucumber, and carrot ribbons together. Top with the warm chicken and a handful of blueberries and halved grapes for a burst of hydration.
