Lemon Garlic Chicken with Roast Vegetables

Protein: 500g chicken thigh chops

From Your Box:

  • 400g potatoes (cubed)
  • 500g pumpkin (cubed)
  • 200g broccoli (florets)
  • 1 carrot (~100g, sliced)

Pantry:

Olive oil, garlic, lemon, salt, pepper

  1. Preheat oven to 200°C.
  2. Toss potatoes, pumpkin and carrot with olive oil, salt and pepper. Roast 20 minutes.
  3. Add broccoli and chicken to tray.
  4. Drizzle chicken with olive oil, garlic and lemon juice.
  5. Roast another 20 minutes until chicken is cooked through.
