Lemon Garlic Barramundi with Roast Potatoes & Broccoli

Protein: Barramundi 500g

From the Box

  • Potatoes – 400g, cubed
  • Broccoli – 200g, florets
  • Brown onion – 1 small (~80g) sliced
  • Cherry tomatoes – ½ punnet
  • Baby spinach – 1 handful

Pantry

Olive oil, garlic, lemon, salt, pepper

  1. Roast potatoes and onion with olive oil, salt and pepper at 200°C for 20 minutes.
  2. Add broccoli and tomatoes to tray and roast another 10 minutes.
  3. Season barramundi with olive oil, garlic, lemon, salt and pepper.
  4. Pan fry fish 3–4 minutes each side until cooked.
  5. Serve fish over spinach with roast vegetables.
