KIDS COOK – Easy Fresh Orange Cake

Time to hand the kids the wooden spoon! This simple, zesty cake is full of fresh orange flavour and finished with an easy drizzle icing. It's perfect for little bakers learning to measure, mix and crack eggs, with plenty of jobs to go around.

You’ll need

  • 2 oranges
  • 125g butter, softened
  • 3/4 cup caster sugar
  • 2 eggs
  • 1 1/2 cups self-raising flour
  • 1/2 cup milk

Easy orange icing

  • 1 cup icing sugar
  • 1–2 tbsp fresh orange juice
  • A little orange zest

  1. Heat oven to 180°C. Grease and line a 20cm round cake tin.
  2. Have an adult help zest the oranges, then squeeze enough juice to give you about 1/4 cup.
  3. Beat butter and sugar together until creamy.
  4. Add eggs one at a time and mix well.
  5. Stir through the orange zest and juice.
  6. Fold in flour and milk, alternating between the two, until just combined.
  7. Spoon into the prepared tin and smooth the top.
  8. Bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
  9. Allow to cool.
  10. Mix icing sugar with enough orange juice to make a thick but pourable icing.
  11. Spread over the cooled cake and finish with a little extra orange zest.

KIDS' JOBS: Measuring, juicing, mixing, cracking eggs, spooning the mixture into the tin and making the icing. Adults can handle the oven and zesting for younger children.
