Honey Soy Chicken & Veggie Tray Bake

One tray, 40 minutes, Sweet flavour kids love

Protein: OrganicBox Chicken Thighs (approx. 1kg)

From Your Large Family Box:

  • 500g potatoes (cut into chunks)
  • 250g carrots (sliced)
  • 1 large red onion (~130g, sliced)
  • 200g broccoli (florets)
  • 1 zucchini (~200g, sliced)

Pantry:

2 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp honey, 2 cloves garlic, salt & pepper

  1. Preheat oven to 200°C.
  2. Toss potatoes, carrots and onion with olive oil, salt and pepper. Roast 15 minutes.
  3. Mix soy sauce, honey and garlic. Brush over chicken thighs.
  4. Add chicken to tray. Roast 10 minutes.
  5. Add broccoli and zucchini. Roast a further 15 minutes until chicken is cooked through and golden.
