Honey Soy Chicken & Veg Tray Bake

  • 2 carrots, chopped
  • 1 zucchini, sliced
  • Remaining greens (optional use of broccoli/silverbeet stems)
  • 2 cloves garlic, minced

On-hand staples from the pantry

  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp oil

  1. Preheat oven to 200°C.
  2. In a tray, combine chopped vegetables and garlic.
  3. Add chicken on top.
  4. Mix soy sauce, honey, and oil, then pour over everything.
  5. Toss lightly to coat.
  6. Roast for 30–40 minutes until chicken is cooked and vegetables are tender.
  7. Serve straight from the tray.
