Honey Garlic Chicken with Roast Sweet Potato & Broccoli

  • 400g chicken thighs
  • 1 large sweet potato, cut into wedges
  • 500g broccoli florets

Pantry ingredients

  • 2 tbsp honey
  • 2 garlic cloves, crushed
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt & pepper

  1. Preheat oven to 200°C fan-forced (220°C conventional).
  2. Toss sweet potato with olive oil, salt and pepper. Roast for 35–40 minutes.
  3. Mix honey, garlic and soy sauce.
  4. Brush over chicken thighs.
  5. Bake chicken for 25–30 minutes, brushing with remaining glaze halfway through.
  6. Steam broccoli for 4–5 minutes.
  7. Serve chicken with roasted sweet potato and broccoli.
