Honey Garlic Chicken with Roast Sweet Potato & Broccoli

- 400g chicken thighs
- 1 large sweet potato, cut into wedges
- 500g broccoli florets
Pantry ingredients
- 2 tbsp honey
- 2 garlic cloves, crushed
- 1 tbsp soy sauce
- 1 tbsp olive oil
- Salt & pepper
- Preheat oven to 200°C fan-forced (220°C conventional).
- Toss sweet potato with olive oil, salt and pepper. Roast for 35–40 minutes.
- Mix honey, garlic and soy sauce.
- Brush over chicken thighs.
- Bake chicken for 25–30 minutes, brushing with remaining glaze halfway through.
- Steam broccoli for 4–5 minutes.
- Serve chicken with roasted sweet potato and broccoli.
