Honey Garlic Chicken Tray

This tray bake is a wholesome way to get a proper meal on the table. Organic chicken is a lean protein raised to certified organic standards, and roasting it over organic pumpkin, carrot, and broccoli means the vegetables soak up the flavour while holding on to their goodness.

Serves: 4 | Cooking Time: 40 minutes

Ingredients:

  • 400g Jap pumpkin, cut into 2cm pieces
  • 1 parsnip, peeled and cut into batons
  • 2 carrots, cut into batons
  • 1 head of broccoli, cut into florets
  • 1 red onion, cut into wedges
  • Organic Chicken 4 thighs or breasts
  • 3 tablespoons of honey
  • 4 cloves garlic, crushed
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper

Directions:

  • Preheat the oven to 200C. Mix the honey, garlic, olive oil and soy sauce in a small bowl.
  • Put the pumpkin, parsnip, carrot and onion on a large tray. Toss with half the honey garlic mix and season.
  • Roast for 15 minutes to give the harder veg a head start.
  • Push the veg to the sides, add the chicken and brush it with the rest of the honey garlic mix.
  • Scatter the broccoli around the chicken and return to the oven for 20 to 25 minutes, until the chicken is cooked through and the veg is tender. Rest the chicken for a few minutes before serving.

Storage: You can keep in the fridge for up to 3 days. Reheat in the oven or microwave. The chicken must be stored separately from the veg.

Variations: You can also swap the chicken for wild-caught fish and add it for the last 12 minutes only. Add a pinch of chilli flakes to the glaze for heat, or throw in some green beans with the broccoli.
