Homemade Beef & Veggie Burgers with Potato Wedges

OrganicBox ingredients
- 500g beef mince
- 300g potatoes, cut into wedges
- 1 carrot, grated
- ½ brown onion, finely diced
- Lettuce leaves
- 2 tomatoes, sliced
- ½ Lebanese cucumber, sliced
Pantry ingredients
- 4 burger buns
- 1 egg
- ½ cup breadcrumbs
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- Olive oil
- Salt & pepper
- Tomato sauce or burger sauce
- Preheat oven to 200°C fan-forced (220°C conventional).
- Toss potato wedges with olive oil, paprika, salt and pepper. Bake for 40 minutes, turning halfway.
- Mix beef mince, grated carrot, onion, egg, breadcrumbs, Worcestershire sauce, salt and pepper.
- Shape into four burger patties.
- Cook patties in a frying pan or BBQ over medium-high heat for 5–6 minutes per side until cooked through.
- Lightly toast burger buns.
- Assemble burgers with lettuce, tomato, cucumber and your favourite sauce.
- Serve with crispy potato wedges.
