Hidden Veggie Beef Ragu with Zucchini & Silverbeet
A lighter version of Bolognese, packed with greens to use up the large bunches of leafy veg.

Produce Used:
Silverbeet (1 Bunch), Zucchini (remaining), Tomatoes (0.25kg), Baby Spinach (1/2 bag), Garlic/Onion (pantry).
Protein:
Cleaver’s Organic Beef Mince (500g)
.
Brown the
Beef Mince
in a large pot.
Finely chop the stems of the
Silverbeet
and dice the
Zucchini
(or grate it to hide it for fussy eaters). Add to the pot and sauté until soft.
Add chopped
Tomatoes
(and a tin of tomatoes if you need more sauce) and simmer for 15 minutes.
Stir in the roughly chopped
Silverbeet leaves
and
Baby Spinach
right at the end until wilted.
Serve over pasta, rice, or extra zucchini noodles (zoodles).
