Hearty "Root & Fruit" Roasted Soup
A thick, velvety soup that feels like a hug in a bowl.

Cooking Time:
2 large Sweet Potatoes, peeled/chopped
3 Carrots, chopped
2 Potatoes, chopped
3 Tomatoes, halved
1 Banana (unpeeled)
1.5L Vegetable stock
2 cloves Garlic
2 tbsp Olive oil
Seasoning: 1 tsp Smoked Paprika, Salt, and Black Pepper
Toss sweet potatoes, carrots, potatoes, and tomatoes in oil and paprika. Roast at 200°C for 35 minutes.
Place the whole banana (in skin) on the tray for the last 15 minutes.
Squeeze the roasted banana and garlic out of their skins into a large pot with the roasted veggies.
Add stock and bring to a boil.
Use a stick blender to puree until completely smooth. Season heavily with black pepper.
