Hearty "Root & Fruit" Roasted Soup

A thick, velvety soup that feels like a hug in a bowl.

  • 2 large Sweet Potatoes, peeled/chopped
  • 3 Carrots, chopped
  • 2 Potatoes, chopped
  • 3 Tomatoes, halved
  • 1 Banana (unpeeled)
  • 1.5L Vegetable stock
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • Seasoning: 1 tsp Smoked Paprika, Salt, and Black Pepper

  • Toss sweet potatoes, carrots, potatoes, and tomatoes in oil and paprika. Roast at 200°C for 35 minutes.
  • Place the whole banana (in skin) on the tray for the last 15 minutes.
  • Squeeze the roasted banana and garlic out of their skins into a large pot with the roasted veggies.
  • Add stock and bring to a boil.
  • Use a stick blender to puree until completely smooth. Season heavily with black pepper.
