Hearty Lentil, Pumpkin & Vegetable Soup

- Remaining pumpkin
- Remaining carrots
- Remaining mushrooms
- Remaining cabbage
- 1 apple
Pantry Staples
- Onion
- Garlic
- Stock
- Olive oil
- Bread to serve
- Dice pumpkin, carrots, mushrooms and apple.
- Heat olive oil in a large pot and sauté onion and garlic.
- Add vegetables, apple and lentils.
- Pour in 1.5L stock.
- Simmer for 35–40 minutes until lentils are soft.
- Stir through shredded cabbage for the final 5 minutes.
- Season well and serve with crusty bread.
