Hearty Lentil, Pumpkin & Vegetable Soup

  • 400g brown lentils

Box Ingredients

  • Remaining pumpkin
  • Remaining carrots
  • Remaining mushrooms
  • Remaining cabbage
  • 1 apple

Pantry Staples

  • Onion
  • Garlic
  • Stock
  • Olive oil
  • Bread to serve

  1. Dice pumpkin, carrots, mushrooms and apple.
  2. Heat olive oil in a large pot and sauté onion and garlic.
  3. Add vegetables, apple and lentils.
  4. Pour in 1.5L stock.
  5. Simmer for 35–40 minutes until lentils are soft.
  6. Stir through shredded cabbage for the final 5 minutes.
  7. Season well and serve with crusty bread.
