Hearty Black Bean, Cauliflower & Kale Chilli

- Half cauliflower
- Remaining kale
- 1 carrot
Pantry
- 1 tin tomatoes
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cup stock
- Dice cauliflower into small florets.
- Sauté carrot for 3 minutes.
- Add spices and cook briefly.
- Add tomatoes and stock.
- Simmer 15 minutes.
- Stir through black beans.
- Add shredded kale.
- Simmer 10 more minutes.
- Serve with quinoa pasta or crusty bread.
