Hearty Black Bean, Cauliflower & Kale Chilli

Protein

  • 1 tin black beans

Box Contents

  • Half cauliflower
  • Remaining kale
  • 1 carrot

Pantry

  • 1 tin tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 cup stock

  1. Dice cauliflower into small florets.
  2. Sauté carrot for 3 minutes.
  3. Add spices and cook briefly.
  4. Add tomatoes and stock.
  5. Simmer 15 minutes.
  6. Stir through black beans.
  7. Add shredded kale.
  8. Simmer 10 more minutes.
  9. Serve with quinoa pasta or crusty bread.
