Ginger Tofu & Broccoli Stir-Fry
Replace: Beef Stir Fry Strips
With: 400g firm tofu
Use exactly the same vegetables:
- Broccoli
- Pak Choy
- Onion
- Carrot
The ginger-soy sauce works wonderfully with crispy tofu.
Alternative: Use tempeh if available.
Protein
- 400g firm tofu
Box Contents
- 500g broccoli, cut into florets
- 1 pak choy, sliced
- Remaining onions, sliced
- Remaining carrots (approximately 150g), julienned
Pantry Staples
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp grated ginger
- 2 cloves garlic
- 1 tbsp sesame oil
- Rice for serving
- Mix soy, honey, ginger and garlic.
- Heat oil in a wok or large frying pan.
- Cook beef until browned.
- Remove beef.
- Stir-fry onion, broccoli and carrots for 3-4 minutes.
- Add pak choy and cook another minute.
- Return beef to pan.
- Pour over sauce and toss well.
- Serve over rice.
