Ginger & Garlic Chicken Mince Rice Bowls

- 500g chicken mince

- 1 carrot, finely diced
- 2 celery stalks, diced
- Remaining red onion, diced
- Remaining green beans, sliced
- 1 Lebanese cucumber, diced
- Remaining tomatoes, diced
Pantry Staples
- 2 cloves garlic, crushed
- 2 tsp grated ginger
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil (optional)
- 2 cups cooked rice
- Olive oil
- Heat a drizzle of olive oil in a large frying pan over medium-high heat.
- Add onion, carrot and celery. Cook for 5 minutes.
- Stir in garlic and ginger and cook for 1 minute.
- Add chicken mince, breaking it up with a spoon, and cook for 6–8 minutes until browned.
- Add sliced beans, soy sauce and honey. Cook for another 3–4 minutes, stirring occasionally.
- If using, stir through sesame oil just before serving.
- Serve over steamed rice with diced cucumber and tomato on the side.
Chef's Tip: Add a sprinkle of sesame seeds or sliced spring onions if you have them on hand.
