Ginger & Garlic Chicken Mince Rice Bowls

  • 500g chicken mince

  • 1 carrot, finely diced
  • 2 celery stalks, diced
  • Remaining red onion, diced
  • Remaining green beans, sliced
  • 1 Lebanese cucumber, diced
  • Remaining tomatoes, diced

Pantry Staples

  • 2 cloves garlic, crushed
  • 2 tsp grated ginger
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil (optional)
  • 2 cups cooked rice
  • Olive oil

  1. Heat a drizzle of olive oil in a large frying pan over medium-high heat.
  2. Add onion, carrot and celery. Cook for 5 minutes.
  3. Stir in garlic and ginger and cook for 1 minute.
  4. Add chicken mince, breaking it up with a spoon, and cook for 6–8 minutes until browned.
  5. Add sliced beans, soy sauce and honey. Cook for another 3–4 minutes, stirring occasionally.
  6. If using, stir through sesame oil just before serving.
  7. Serve over steamed rice with diced cucumber and tomato on the side.

Chef's Tip: Add a sprinkle of sesame seeds or sliced spring onions if you have them on hand.
