Ginger Chicken & Bok Choy Stir Fry with Green Beans

- 1 bunch bok choy
- 250g green beans
- 1 carrot
- ½ red onion

- 500g organic chicken breast (link to chicken breast)
Pantry
- 1 tbsp grated ginger
- 2 garlic cloves
- 2 tbsp soy sauce or tamari
- 1 tbsp honey
- Cooking oil
- Optional: rice or noodles
- Slice chicken into thin strips.
- Trim beans and cut bok choy into pieces.
- Julienne carrot and slice onion.
- Heat oil in a large pan or wok.
- Cook chicken for 4–5 minutes until golden.
- Add onion, carrot, beans and stir fry for 3 minutes.
- Add bok choy, ginger and garlic.
- Stir through soy sauce and honey.
- Cook until vegetables are tender but crisp.
- Serve on its own or with rice/noodles.
