Ginger Chicken & Bok Choy Stir Fry with Green Beans

  • 1 bunch bok choy
  • 250g green beans
  • 1 carrot
  • ½ red onion

  • 500g organic chicken breast (link to chicken breast)

Pantry

  • 1 tbsp grated ginger
  • 2 garlic cloves
  • 2 tbsp soy sauce or tamari
  • 1 tbsp honey
  • Cooking oil
  • Optional: rice or noodles

  1. Slice chicken into thin strips.
  2. Trim beans and cut bok choy into pieces.
  3. Julienne carrot and slice onion.
  4. Heat oil in a large pan or wok.
  5. Cook chicken for 4–5 minutes until golden.
  6. Add onion, carrot, beans and stir fry for 3 minutes.
  7. Add bok choy, ginger and garlic.
  8. Stir through soy sauce and honey.
  9. Cook until vegetables are tender but crisp.
  10. Serve on its own or with rice/noodles.
