Ginger Broccoli Stir Fry
Looking for a quick weeknight dinner? This stir fry uses broccoli and fresh ginger from your Organic Large Mixed Produce Box and is ready in 15 minutes.
- 500g broccoli, cut into florets
- 1 small carrot, julienned
- 1 brown onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 cup water
- Sesame seeds for garnish
Optional Protein:
- 400g organic chicken breast, sliced
- Or 200g firm tofu, cubed
Cut broccoli into bite-sized florets. Don't make them too big, or they won't cook through. Julienne the carrot and slice the onion. If using organic chicken or tofu, cook it first. Heat 1 tablespoon of oil in a wok over high heat and cook the protein until done. Remove and set aside. Heat the remaining oil in the same wok over high heat. Add the sliced onion and stir-fry for 2 minutes. Add minced garlic and grated ginger. Cook for 30 seconds until fragrant, watching carefully so the garlic doesn't burn. Add the broccoli florets and julienned carrot. Stir fry for 4-5 minutes, tossing constantly. Add a splash of water if the pan gets dry. Mix soy sauce, honey, rice vinegar, sesame oil, and remaining water in a small bowl. Pour the sauce into the wok and toss everything together. Cook for another minute until the sauce coats the vegetables. Return the cooked protein to the wok if using. Toss to combine. Garnish with sesame seeds. Serve immediately over steamed rice or noodles.
Storage Tips:
Refrigerator: Keep leftovers for up to 3 days in an airtight container. Reheating: Reheat in a hot pan for the best texture. The microwave makes broccoli go soggy. Meal Prep: Cook a double batch on Sunday for healthy weekday lunches.
Variations:
Add Mushrooms: Stir in sliced mushrooms for extra umami. Spicy Version: Add fresh chilli or sriracha sauce. Cashew Crunch: Top with toasted cashews for texture. Add Capsicum: Include sliced capsicum for colour and sweetness.
Serving Suggestions:
Serve over steamed jasmine rice, brown rice, or rice noodles. Top with a fried egg for a complete meal. Great with prawn crackers on the side.
