Ginger Beef Stir-fry with Green Beans & Zucchini

OrganicBox ingredients

  • 500g beef stir-fry strips
  • 250g green beans, trimmed
  • 300g zucchini, sliced
  • 2 carrots, julienned
  • ½ red onion, sliced

Pantry ingredients

  • Cooked rice or noodles
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey
  • 2 garlic cloves, crushed
  • 2 tsp grated fresh ginger
  • 1 tsp sesame oil (optional)

  1. Cook rice or noodles according to the packet instructions.
  2. Mix together the soy sauce, oyster sauce and honey.
  3. Heat a wok or large frying pan over high heat.
  4. Cook the beef in batches for 2–3 minutes until browned. Remove from the pan.
  5. Add the onion, carrots, beans and zucchini and stir-fry for 4–5 minutes.
  6. Stir through the garlic and ginger and cook for 30 seconds until fragrant.
  7. Return the beef to the pan and pour over the sauce.
  8. Toss everything together until heated through and well coated.
  9. Serve immediately over rice or noodles.
