Garlic Chicken Stir Fry with Vegetables

  • ½ broccoli
  • 1 zucchini
  • 1 carrot
  • ½ spring onions

Pantry Staples

  • Soy sauce
  • Garlic
  • Ginger
  • Sesame oil (optional)

  1. Cook basmati rice according to packet instructions.
  2. Slice broccoli, zucchini, carrot and spring onions.
  3. Heat a wok or pan over high heat.
  4. Cook beef for 1–2 minutes until browned, then remove from pan.
  5. Add a little oil and stir fry vegetables for 3–4 minutes until just tender.
  6. Add garlic and ginger, cook for 30 seconds.
  7. Return beef to pan, add soy sauce and a drizzle of sesame oil.
  8. Toss well and serve immediately over rice.
