Garlic Chicken Stir Fry with Vegetables

- ½ broccoli
- 1 zucchini
- 1 carrot
- ½ spring onions
Pantry Staples
- Soy sauce
- Garlic
- Ginger
- Sesame oil (optional)
- Cook basmati rice according to packet instructions.
- Slice broccoli, zucchini, carrot and spring onions.
- Heat a wok or pan over high heat.
- Cook beef for 1–2 minutes until browned, then remove from pan.
- Add a little oil and stir fry vegetables for 3–4 minutes until just tender.
- Add garlic and ginger, cook for 30 seconds.
- Return beef to pan, add soy sauce and a drizzle of sesame oil.
- Toss well and serve immediately over rice.
