Garden Harvest Frittata
Frittatas are the ultimate "clean out the fridge" meal. This version uses sweet corn and beans for a satisfying texture.
- 6 Eggs (beaten)
- 1/2 cup Sweet Corn (kernels cut off the cob)
- 1/2 cup Beans (trimmed and chopped)
- 1/2 cup Cherry Tomatoes (halved)
- 1/2 Zucchini (grated)
- Handful of Silverbeet (finely chopped)
- Preheat your oven grill (broiler).
- In an oven-proof frying pan, sauté the beans, corn, and zucchini for 3 minutes.
- Stir in the silverbeet until wilted.
- Pour the beaten eggs over the vegetables. Drop the cherry tomatoes on top.
- Cook on the stovetop on low heat for 5 minutes until the bottom is set.
- Place the pan under the oven grill for 2–3 minutes until the top is golden and firm.
