Garden Harvest Frittata

Frittatas are the ultimate "clean out the fridge" meal. This version uses sweet corn and beans for a satisfying texture.

Serves: 3 | Cooking Time: 15 minutes

  • 6 Eggs (beaten)
  • 1/2 cup Sweet Corn (kernels cut off the cob)
  • 1/2 cup Beans (trimmed and chopped)
  • 1/2 cup Cherry Tomatoes (halved)
  • 1/2 Zucchini (grated)
  • Handful of Silverbeet (finely chopped)

  1. Preheat your oven grill (broiler).
  2. In an oven-proof frying pan, sauté the beans, corn, and zucchini for 3 minutes.
  3. Stir in the silverbeet until wilted.
  4. Pour the beaten eggs over the vegetables. Drop the cherry tomatoes on top.
  5. Cook on the stovetop on low heat for 5 minutes until the bottom is set.
  6. Place the pan under the oven grill for 2–3 minutes until the top is golden and firm.
