Fresh Veggie Spring Rolls
These fresh vegetable spring rolls are light, crunchy, and incredibly satisfying. Packed with colourful organic vegetables from your organic box, Large Family Box, they're perfect for healthy lunches, party platters, or light dinners. Dip them in peanut sauce or sweet chilli sauce for maximum deliciousness.
- 500g carrots, julienned
- 300g cucumber, julienned
- 300g zucchini, julienned
- 250g beans, blanched and halved
- 2 cups baby spinach
- 400g red onions, thinly sliced (optional)
- 12 rice paper wrappers (22cm round)
- Rice vermicelli noodles (100g, cooked)
- Fresh mint leaves
- Fresh coriander leaves
- Fresh basil leaves
- 300g organic Chicken poached and shredded, OR organic Prawns cooked and halved
For Peanut Dipping Sauce:
- ¼ cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 2-3 tablespoons warm water
- Chilli flakes (optional)
- Prepare all ingredients first (mise en place is key!): Julienne carrots, cucumber, and zucchini into thin matchsticks. Blanch beans for 2 minutes, cool, and halve. Wash and dry spinach and herbs.
- Cook rice vermicelli according to package directions. Drain and rinse with cold water.
- Make the peanut sauce: Whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and warm water until smooth. Add more water if it's too thick. Set aside.
- Set up your rolling station: Fill a large shallow dish with warm water. Lay out a damp tea towel on your work surface.
- Dip one rice paper wrapper into the warm water for 3-5 seconds until just softened (not too long or it will tear). Lay it flat on the damp tea towel.
- On the bottom third of the wrapper (closest to you), arrange your fillings in a line: a small handful of vermicelli noodles, julienned carrots, cucumber, zucchini, beans, baby spinach, a few herb leaves, and protein if using.
- Don't overfill! Less is more when it comes to rolling.
- Fold the bottom of the wrapper up and over the filling. Fold in the sides.
- Roll tightly away from you, like a burrito, keeping the filling compact. The rice paper will stick to itself.
- Place seam-side down on a plate. Cover with a damp tea towel to prevent drying out.
- Repeat with the remaining wrappers and filling. Slice each roll in half diagonally for easier eating. Serve immediately with peanut dipping sauce.

Storage: Best eaten within 2-3 hours. Store uncut rolls covered with a damp paper towel in an airtight container in the fridge.
