Fresh Garden Salad Wraps
These fresh garden salad wraps are light, crunchy, and incredibly satisfying. Packed with crisp organic vegetables from your organic box delivery, they're perfect for healthy lunches, picnics, or light dinners. The combination of textures and the creamy avocado makes them absolutely delicious.
- 1 whole cos lettuce, leaves separated
- 2 cups superfood mix (or use spinach)
- 300g cucumber, julienned
- 600g carrots, grated or julienned
- 1 punnet cherry tomatoes, halved
- 2 small avocados, sliced
- 400g red onions, thinly sliced
- ½ rockmelon, cubed (adds sweet crunch!)
- 8 large tortilla wraps or mountain bread
- Hummus or Greek Yoghurt for spreading
- Fresh herbs (mint, basil, or coriander)
- Organic Chicken 400g grilled and sliced, OR Organic Feta 150g crumbled, OR chickpeas
For The Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper
- Make the dressing - Whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper. Set aside.
- Prepare all vegetables. Separate cos lettuce leaves. Julienne the cucumber and carrots. Halve cherry tomatoes. Slice avocados. Thinly slice red onions. Cube rockmelon.
- If using organic chicken, grill or pan-fry until cooked through. Slice thinly.
- Set up your wrap assembly station with all ingredients ready.
- Lay a tortilla wrap flat on a clean surface. Spread 2 tablespoons of hummus or Greek yoghurt across the center of the wrap.
- Layer cos lettuce leaves on top of the spread.Add a handful of superfood mix or spinach.
- Arrange julienned cucumber, grated carrots, cherry tomatoes, sliced red onions, and rockmelon cubes in a line down the center.
- Add your protein: sliced chicken, crumbled feta, or chickpeas. Top with sliced avocado.
- Drizzle with the prepared dressing (not too much or it will get soggy!). Sprinkle with fresh herbs.
- Fold the wrap: Fold in the sides first, then roll tightly from the bottom up. Slice in half diagonally. Repeat with remaining wraps.
Serving Suggestions: Perfect for lunch boxes, picnics, or light dinners. Serve with sweet potato chips or fresh fruit on the side.
Storage: Best eaten fresh, but can be wrapped tightly in plastic wrap and refrigerated for up to 4 hours. Keep dressing separately if making ahead.
