Crispy Tofu with Roast Veg & Garlic Greens

Replace: Chicken Patties
With: 400g firm tofu

Press tofu, cut into thick slices, coat lightly with cornflour and bake until crispy. Serve with the roasted potatoes, cauliflower and silverbeet.

For vegetarians, halloumi would also work beautifully.

Protein

  • 400g firm tofu

Box Contents

  • 500g potatoes, cut into wedges
  • ½ cauliflower, cut into florets
  • ½ bunch silverbeet, sliced

Pantry Staples

  • Olive oil
  • 2 cloves garlic
  • Salt and pepper

  1. Heat oven to 200°C.
  2. Toss potatoes and cauliflower with oil, salt and pepper.
  3. Roast for 35-40 minutes until golden.
  4. Cook chicken patties according to packet directions.
  5. Sauté garlic in a frying pan.
  6. Add silverbeet and cook until wilted.
  7. Serve patties with roast vegetables and silverbeet.
