Crispy Tofu & Ginger-Soy Veggie Stir-fry

Protein: Tofu

  • Tofu
  • Spinach bunch
  • 0.2kg Carrots
  • 0.2kg Zucchini
  • 50g ginger
  • Soy Sauce to taste plus remaining Spring Onions.

The Meal: Press and cube the tofu, then pan-fry until crispy. Sauté the sliced carrots, ginger and zucchini. At the very end, toss in the large bunch of spinach until just wilted and soy sauce to taste. Serve over rice (if you have it) or enjoy as a hearty vegetable-heavy bowl.
