Crispy Cinnamon Apple & Banana Filo Rolls
Crunchy filo parcels filled with cinnamon-spiced apple and banana. A light, naturally sweet way to finish the week.

- 2 medium apples – approximately 300g
- 1 large banana
Additional ingredients
- 8 sheets organic filo pastry
- 40–50g butter, melted – or olive oil
- 1 tsp ground cinnamon
- 1–2 tsp brown sugar, coconut sugar or maple syrup – optional
- Organic vanilla yoghurt or custard, to serve – optional
- Prepare the apples: Peel, core and finely dice the apples.
- Cook the filling: Place the diced apple in a frying pan with around 10g of the butter and the cinnamon. Cook over medium-low heat for 5–7 minutes, stirring occasionally, until the apple has softened slightly but still holds its shape.
- Sweeten if needed: Stir through the brown sugar, coconut sugar or maple syrup if using. The banana will add plenty of natural sweetness, so you may find you don't need it.
- Add the banana: Remove the apples from the heat and allow them to cool. Slice or roughly mash the banana and gently fold it through the cooled apple mixture.
- Prepare the filo: Preheat the oven to 190°C and line a baking tray with baking paper. Keep the filo covered with a slightly damp clean tea towel while you're working so it doesn't dry out.
- Make the rolls: Lay out one sheet of filo and lightly brush with melted butter. Fold it in half to create a stronger double layer.
- Place a couple of tablespoons of apple and banana filling towards one end, leaving a border around the edges.
- Fold the sides of the filo in over the filling, then roll it up snugly, just like a spring roll. Place seam-side down on the prepared tray.
- Repeat with the remaining filo and filling.
- Bake: Lightly brush the tops with the remaining melted butter. Bake for approximately 15–20 minutes, or until beautifully crisp and golden.
To serve
Serve warm as they are, or with a little organic vanilla yoghurt or custard for dipping.
For something extra, mix a pinch of cinnamon through the yoghurt for a simple cinnamon yoghurt dipping sauce.
Air fryer option
These should also work beautifully in the air fryer. Cook at around 180°C for 8–10 minutes, checking towards the end, until golden and crisp.
