Creamy Tuscan Butter Beans

Serves: 4 | Cooking Time:

  • 1 x 400g butter beans, drained
  • Remaining tomatoes
  • Remaining spinach
  • 2 garlic cloves
  • 3/4 cup cream or coconut cream
  • Chili flakes
  • Olive oil

To Serve

  • Toast or roasted potatoes

  1. Cook garlic and chili flakes in olive oil.
  2. Add tomatoes and soften.
  3. Stir in butter beans and cream.
  4. Simmer 5–7 mins.
  5. Stir through spinach until wilted.
