Creamy Tuscan Butter Beans
Serves: 4 | Cooking Time:
- 1 x 400g butter beans, drained
- Remaining tomatoes
- Remaining spinach
- 2 garlic cloves
- 3/4 cup cream or coconut cream
- Chili flakes
- Olive oil
To Serve
- Toast or roasted potatoes
- Cook garlic and chili flakes in olive oil.
- Add tomatoes and soften.
- Stir in butter beans and cream.
- Simmer 5–7 mins.
- Stir through spinach until wilted.
