Creamy Spinach & Broccoli Pasta (Vegetarian)

From Your Large Family Box:

  • 200g broccoli (small florets)
  • ½ bag baby spinach
  • 1 medium red onion (~130g, diced)
  • ½ punnet cherry tomatoes (halved)

Pantry:

400g pasta, 1 cup cream (or milk), 1 cup grated cheese, 2 cloves garlic, olive oil - we can link our cheese, and garlic

  1. Cook pasta according to packet instructions.
  2. Sauté onion and garlic in olive oil (3–4 mins).
  3. Add broccoli and cook 3–4 minutes until just tender.
  4. Stir in cream and simmer gently.
  5. Add spinach and tomatoes, cook until wilted.
  6. Toss through drained pasta and cheese.
