Creamy Mushroom Celery Soup

- 150g mushrooms, sliced
- 3 celery stalks, chopped
- 1 small cauliflower (about 250g), roughly chopped
- 4 cloves garlic, minced
- 1 small carrot, chopped
- 2 tablespoons butter
- 1 tablespoon olive oil
- 900ml vegetable stock
- 150ml cream
- Fresh herbs (thyme or parsley)
- Salt and pepper to taste
Step 1: Sauté Vegetables Heat butter and olive oil in a large pot over medium heat. Add mushrooms and cook for 5 minutes until golden. Add celery, cauliflower, carrot, and garlic. Cook for another 5 minutes, stirring occasionally.
