Creamy Chicken, Leek & Zucchini Skillet

A lighter, deconstructed "pot pie" feel.

  • 500g Chicken mince
  • 1 bunch Leeks (white parts only, sliced)
  • 1 Zucchini (diced)
  • 1/2 bag Baby Spinach
  • remaining 500g Potatoes.

Method: Boil and mash the potatoes with a little milk/butter. In a skillet, brown the chicken mince. Add the leeks and zucchini, cooking until soft. Stir through the spinach until wilted. Serve the creamy chicken mixture in bowls topped with a generous scoop of mash.
