Creamy Chicken, Cauliflower & Kale Pasta Bake

OrganicBox ingredients

  • 500g chicken mince
  • ½ cauliflower, cut into florets
  • 1 bunch kale, stems removed and chopped
  • ½ brown onion, diced

Pantry ingredients

  • 500g penne pasta
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 500ml milk
  • 1½ cups grated cheese
  • 2 garlic cloves
  • Salt & pepper

  1. Preheat oven to 180°C fan-forced (200°C conventional).
  2. Cook pasta until just al dente.
  3. Steam cauliflower for 5 minutes.
  4. Heat a frying pan and cook onion, garlic and chicken mince until browned.
  5. Stir through chopped kale until wilted.
  6. Melt butter in a saucepan, stir in flour, then slowly whisk in milk to make a smooth white sauce.
  7. Stir through one cup of grated cheese.
  8. Combine pasta, chicken mixture, cauliflower and cheese sauce.
  9. Transfer to a baking dish and top with remaining cheese.
  10. Bake for 25–30 minutes until golden and bubbling.
