Creamy Chicken, Cauliflower & Kale Pasta Bake

- 500g chicken mince
- ½ cauliflower, cut into florets
- 1 bunch kale, stems removed and chopped
- ½ brown onion, diced
Pantry ingredients
- 500g penne pasta
- 2 tbsp butter
- 2 tbsp plain flour
- 500ml milk
- 1½ cups grated cheese
- 2 garlic cloves
- Salt & pepper
- Preheat oven to 180°C fan-forced (200°C conventional).
- Cook pasta until just al dente.
- Steam cauliflower for 5 minutes.
- Heat a frying pan and cook onion, garlic and chicken mince until browned.
- Stir through chopped kale until wilted.
- Melt butter in a saucepan, stir in flour, then slowly whisk in milk to make a smooth white sauce.
- Stir through one cup of grated cheese.
- Combine pasta, chicken mixture, cauliflower and cheese sauce.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 25–30 minutes until golden and bubbling.
