Creamy Cauliflower Soup

This creamy cauliflower soup is pure comfort in a bowl. Naturally smooth and velvety without any cream, it's packed with nutrition from organic cauliflower and potatoes. Serve with crusty bread for a cozy meal, or add organic chicken for extra protein.

Serves: 4 | Cooking Time: 40 mins

  • 1 whole cauliflower, cut into florets
  • 500g potatoes, peeled and cubed
  • 1 cup baby spinach (for garnish)
  • Organic Chicken 400g - diced (optional)
  • 1 litre vegetable or chicken stock
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ cup organic milk or coconut cream
  • Salt, pepper, and nutmeg

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook for 3 minutes.
  2. Add cauliflower and potatoes. Stir for 2 minutes.
  3. Pour in stock and bring to a boil. Reduce the heat and simmer for 20 minutes until the vegetables are very soft.
  4. If using chicken, add diced pieces and simmer for 10 minutes until cooked through.
  5. Blend the soup until completely smooth using a stick blender.
  6. Stir in milk or coconut cream. Season with salt, pepper, and a pinch of nutmeg.
  7. Serve hot, garnished with fresh baby spinach leaves.
