Cleaver's Mini Beef Meatballs in Rustic Tomato Sauce

  • 1 pack Cleaver's Mini Beef Meatballs

Produce Box

  • 2 tomatoes, diced
  • ½ zucchini, grated
  • ½ red onion, diced

Pantry Staples

  • 500ml passata
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil
  • 1 tsp Italian herbs
  • Salt & pepper
  • Pasta or rice for serving

  1. Heat olive oil in a large frying pan over medium heat.
  2. Cook onion for 4–5 minutes until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in grated zucchini and tomatoes. Cook for 5 minutes.
  5. Add passata and Italian herbs. Simmer gently for 10 minutes.
  6. Meanwhile, cook the Cleaver's Mini Beef Meatballs according to the packet instructions.
  7. Stir the cooked meatballs into the sauce and simmer for another 5 minutes.
  8. Serve over cooked pasta or rice.

Chef's Tip: Finish with fresh basil or grated Parmesan.
